Citrus Juice Processing Technology: How Much Do You Know?

Sep 13, 2024 Leave a message

Citrus juice, a favorite among healthy beverages, travels from the orchard branches to consumers' tables-every step embodies the wisdom of technology and innovation. Below is a detailed breakdown of its processing journey:

1. Raw Material Cleaning: Double Guarantee for Purity

After careful selection of fresh citrus fruits, the first step is cleaning:

First, fruits are sent to a bubble washing machine for a gentle initial clean, removing surface dust and impurities.

Then, they are transferred to a brush washing machine for a second, more thorough scrub. This dual-cleaning process ensures the absolute purity and hygiene of every bottle of citrus juice.

2. Oil Milling Process: Remove Bitterness, Retain Natural Aroma

Next, the citrus undergoes a "transformation"-the oil milling process. This step targets the bitter substances in citrus peels, effectively removing bitterness while preserving the fruit's natural, fresh aroma, laying the foundation for the juice's pleasant taste.

3. Pressing & Pulping: Extract Concentrated Juice, Refine Texture

The treated citrus is sent to a grading press, where precise pressing releases rich, concentrated juice.

During temporary storage, a single-pass pulper further refines the juice, breaking down coarse particles to make the texture smoother and more consistent.

4. Essential Oil Separation: Resource Recycling for Maximum Value

A disc centrifuge is then used to separate essential oils from the juice. These precious citrus essential oils are not discarded-they are recycled for use in cosmetics, aromatherapy, or food flavorings, realizing maximum resource utilization.

5. Degassing & Homogenization: Enhance Taste, Preserve Nutrition

To elevate the juice's quality and shelf life, two key steps follow:

Homogenization: A high-pressure homogenizer crushes suspended particles in the juice, making the texture finer and preventing sedimentation, ensuring a uniform mouthfeel.

Degassing: The degassing process removes dissolved oxygen from the juice, effectively preventing oxidation. This protects the juice's bright color, original flavor, and the integrity of vitamin C (a key nutrient in citrus).

6. Sterilization & Aseptic Filling: Ensure Safety, Boost Efficiency

The final stage locks in the juice's safety and freshness:

Sterilization: The juice passes through a tube-in-tube heat exchanger for either high-temperature short-time (HTST) sterilization or pasteurization, eliminating harmful bacteria while minimizing nutrient loss.

Aseptic Filling: A double-head aseptic bulk bag filler is used for filling. This equipment significantly improves processing efficiency while ensuring the juice remains sterile during packaging, avoiding secondary contamination.

After these meticulous steps, bottles of fresh, pure, and nutrient-rich citrus juice are ready to embark on their journey-bringing health and vitality to consumers around the world. Every link in this process is a blend of technological precision and care for quality, making citrus juice not just a beverage, but a product of scientific innovation.
