Key Project Milestones From Fruit And Vegetable Processing Line Design To Production Start-up

A fruit and vegetable processing line is not only a list of machines. For food factories, smooth start-up depends on process design, plant layout, equipment manufacturing, FAT, shipment, installation, commissioning, and operator training.

 

For many food factories, the first discussion about a fruit and vegetable processing line starts with equipment selection and quotation. However, in real projects, the main risk is often not one single machine. Delays usually come from unclear process requirements, incomplete layout confirmation, poor communication during manufacturing, or insufficient preparation before installation.

 

A complete line for juice, puree, fruit sauce, vegetable products, or concentrate may include washing, sorting, crushing, pulping, enzymatic treatment, sterilization, evaporation, filling, CIP cleaning, and utility systems. These sections must work as one system. If the capacity, connection points, pipe routing, control logic, and cleaning method are not coordinated in advance, the line may arrive at site but still take a long time to reach stable production.

The first milestone is process design. Before selecting equipment, the project team should confirm the raw material, target product, capacity, packaging format, sterilization requirement, automation level, and site conditions. For example, a fruit puree project and a clear juice project may require different pretreatment and sterilization logic. A line for bulk industrial ingredients may also need a different filling and storage strategy compared with a small-package product line.

 

The second milestone is plant layout. A layout drawing turns an equipment list into an installable and operable project. It should consider equipment position, maintenance space, operator access, drainage, steam, compressed air, water supply, electrical connection, platform height, material flow, and logistics route. For plant renovation projects, door size, ceiling height, floor condition, column distance, and existing utility interfaces must also be checked.

 

The third milestone is equipment manufacturing and document control. A processing line is normally customized according to product characteristics and site requirements. During manufacturing, both sides should confirm material specifications, nozzle direction, pipe connections, electrical control logic, platform structure, and delivery scope. Clear drawings and confirmation records reduce misunderstanding and prevent repeated changes during the later stages.

 

The fourth milestone is FAT, or factory acceptance test. FAT should not be treated as a simple visual inspection. It can include equipment completion status, main interfaces, control cabinet, basic running condition, safety items, spare parts, manuals, and packing marks. When customers cannot visit the factory, remote FAT through videos, photos, checklists, and test records can still help identify issues before shipment.

After shipment, the next milestones are installation, commissioning, and training. Before installation, the site should prepare water, electricity, steam, compressed air, drainage, foundation, lifting tools, and installation workers. Commissioning should cover single-machine running, line integration, cleaning procedure, product trial, and key process parameter adjustment. Operator training is also important because daily operation, shutdown, cleaning, alarm handling, and basic maintenance all affect production stability.

 

In practice, many start-up problems are not caused by the equipment alone. They come from gaps between process design, layout, manufacturing, site preparation, and operator training. For this reason, buyers should evaluate not only equipment price, but also the supplier's turnkey project delivery capability from engineering design to stable production.
