I. Introduction to HPP Juice
HPP juice, short for High Pressure Processed Juice, is a major innovation in the juice industry in recent years. Its core lies in the application of HPP (High Pressure Processing) technology-a non-thermal sterilization method. Without heating the juice, this technology applies ultra-high pressure (400 to 600 MPa, equivalent to 4,000 to 6,000 atmospheres) to a sealed container using water as the medium. This pressure causes microorganisms like bacteria, molds, and yeasts in the juice to rupture and die, achieving sterilization.

Since HPP technology does not raise the juice's temperature during processing, it avoids significant loss of nutrients and flavor. As a result, HPP juice retains the original taste and nutritional components of fruits more effectively-for example, over 95% of vitamin C content can be preserved.
II. HPP Juice Production Process
Raw Material Preparation
Select fruits with moderate ripeness and high quality as raw materials.
After arriving at the factory via cold chain transportation, the fruits undergo thorough cleaning. Depending on requirements, bubble washers, spray washers, and brush washers are used to remove surface dirt, pesticide residues, and other contaminants. Meanwhile, the fruits are sorted to eliminate substandard ones.

Juicing
Juicing is carried out using cold-press technology. Unlike traditional cutting and juicing methods, cold-press technology extracts water from fruits through pressure. This avoids increasing the fruit's temperature, better preserving its nutrients and flavor.
Filling
The freshly pressed juice is filled into containers. Filling is usually done in a low-temperature environment to prevent juice oxidation and microbial contamination.
HPP Ultra-High Pressure Sterilization
The filled juice is placed into the sealed container of HPP equipment. Using water as the medium, ultra-high pressure (400 to 600 MPa) is applied for sterilization. This process typically lasts several minutes, effectively killing microorganisms in the juice while preserving its nutrients and flavor.

Packaging & Transportation
The sterilized juice is packaged using materials with good sealing and freshness-retaining properties. After packaging, the juice requires cold chain transportation throughout the entire process to maintain its freshness and quality.
III. Market Trends
With the growing consumer awareness of health, HPP juice has gradually gained traction in the market.
